Dreamy Chocolate Mousse Cake

INGREDIENTS
  • 2 cups all-purpose flour
  • 2 cups sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp. baking powder
  • 1 ½ tsp. baking soda
  • ¾ tsp. salt
  • 1 cup milk
  • 1 cup strong brewed coffee
  • ¾ cup vegetable oil
  • 2 large eggs
  • Dreamy Chocolate Mousse
  • Chocolate Fudge Frosting
  • Garnish: chocolate (grated, curls, sprinkles...use your imagination)

DIRECTIONS
  1. Preheat oven to 350°.
  2. Grease and flour 3 9-inch square or round cake pans.
  3. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add milk, coffee, oil, and eggs.
  5. Beat at medium speed with an electric mixer until smooth.
  6. Pour evenly into prepared pans and bake 23-25 minutes, or until toothpick comes out clean.
  7. Let cool in pans for 10 minutes.
  8. Remove from pans and let cool completely on wire racks.
  9. Using serrated knife, cut cake layers in half horizontally to make 6 layers.
  10. Place 1 layer, cut side up, on a cake plate.
  11. Spread with one-fifth of Dreamy Chocolate Mousse.
  12. Repeat procedure with remaining cake layers and mousse.
  13. Freeze cake for 1 hour.
  14. Spread Chocolate Fudge Frosting evenly over top and sides of cake.
  15. Garnish sides of cake with chocolate.(if desired)
  16. Garnish top of cake with chocolate. (if desired)
