Dreamy Chocolate Mousse

INGREDIENTS
  • 1 envelope unflavored gelatin
  • 3 Tbsp. cold water
  • ¼ cup boiling water
  • 1 cup sugar
  • ½ cup unsweetened cocoa powder
  • 3 cups heavy whipping cream

DIRECTIONS
  1. In a small bowl, soften gelatin in 3 Tbsp. cold water.
  2. Let stand for 2 minutes.
  3. Add boiling water, stirring until gelatin dissolves; set aside.
  4. In a small bowl, combine sugar and cocoa powder.
  5. In a medium bowl, beat cream at medium speed with an electric mixer until foamy.
  6. Gradually add sugar mixture, beating until stiff peaks form.
  7. Stir in gelatin mixture.
  8. Cover, and chill for 4 hours.
