Enchilada Casserole

From Classic Home Cooking cookbook

INGREDIENTS
  • 1 8 oz. can tomato sauce
  • 1 10 oz. can enchilada sauce
  • 1 10oz. can water
  • 1 lb. ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 hard-cooked egg, chopped
  • 1 4.5oz can chopped olives
  • 1/2 tsp. salt
  • 6 tortillas
  • 1/2 lb. Monterey Jack cheese, grated
DIRECTIONS
  1. Heat enhilada sauce, tomato sauce and water.
  2. Brown meat with garlic and onion.
  3. Add egg and olives.
  4. Add salt and 1/2 cup of sauce.
  5. In a casserole, layer tortillas (dipped first in sauce), meat mixture, and cheese.
  6. Pour over remaining sauce.
  7. Top with cheese.
  8. Bake in 350 oven for 25 minutes.
