INGREDIENTS
- 1 8 oz. can tomato sauce
- 1 10 oz. can enchilada sauce
- 1 10oz. can water
- 1 lb. ground beef
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 hard-cooked egg, chopped
- 1 4.5oz can chopped olives
- 1/2 tsp. salt
- 6 tortillas
- 1/2 lb. Monterey Jack cheese, grated
- Heat enhilada sauce, tomato sauce and water.
- Brown meat with garlic and onion.
- Add egg and olives.
- Add salt and 1/2 cup of sauce.
- In a casserole, layer tortillas (dipped first in sauce), meat mixture, and cheese.
- Pour over remaining sauce.
- Top with cheese.
- Bake in 350 oven for 25 minutes.
