Chicken and Broccoli Casserole

From Classic Home Cooking cookbook

INGREDIENTS
  • 2 (10 oz) pkgs. frozen chopped broccoli
  • 4 chicken breasts, cooked and chopped
  • 1 can cream of chicken soup, undiluted
  • 2/3 cup mayonnaise
  • 1/2 cup evaporated milk
  • 3/4 cup shredded Cheddar cheese
  • 1 Tbsp. lemon juice
  • 1-1/2 tsp. curry powder
  • 1 cup buttered breadcrumbs
DIRECTIONS
  1. Cook broccoli according to package directions.
  2. Drain well.
  3. Place in a lightly greased 1-1/2 quart casserole; top with chicken.
  4. Combine remaining ingredients except breadcrumbs, stirring well.
  5. Spoon mixture over chicken, top with breadcrumbs.
  6. Bake at 350 for 30 minutes.
