Blueberry Muffins

INGREDIENTS
  • 1 cup whole wheat flour
  • 1 cup white flour
  • 1 cup or less sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup melted margarine
  • 1/2 tsp. vanilla
  • 1-1/2 to 2 cups fresh or frozen blueberries
DIRECTIONS
  1. Mix dry ingredients.
  2. Add first the milk and then the eggs and vanilla to the melted margarine.
  3. Toss the berries with one tablespoon flour and set aside.
  4. Add liquid to dry mixture and toss just until flour is moistened.
  5. Add the berries and stir to mix.
  6. Batter will not be smooth.
  7. Fill paper muffin-tin liners 1/2 to 2/3 full of batter and bake at 435 for 15 minutes, until browned or toothpick inserted comes out clean.
