Applesauce

From Classic Home Cooking Cookbook

INGREDIENTS:
  • Apples
  • Lemon, if desired
  • Sugar, if desired
  • Cinnamon, if desired
  • Nutmeg, if desired
  • Water
DIRECTIONS:
  1. Peel and core apples. Cut into chunks and put into kettle or heavy saucepan with a very small amount of water so that it covers about 1/4 of the apples.
  2. (The apples will release a lot of water and juice so it is best to start with too little water and add more if needed).
  3. Cover and let simmer until tender and mushy (about 10 to 20 minutes).
  4. Lemon juice will improve the flavor if the apples are not tart.
  5. Add sugar and spices according to taste.
