Shrimp and Feta Stuffed Peppers

INGREDIENTS
  • 20 jalapeno peppers
  • 1 (8oz) pkg. cream cheese, softened
  • 1/2 cup crumbled feta cheese
  • 1/4 cup roasted red peppers, finely chopped
  • 1 (6 oz.) can shrimp, rinsed, drained, and chopped
DIRECTIONS
  1. Cut jalapeno peppers in half lengthwise. Remove and discard seeds and membranes. Set aside.
  2. Preheat oven to 400. Lightly grease a baking sheet; set aside.
  3. In a mixing bowl, combine cheeses. Add roasted red peppers and shrimp, stirring to combine.
  4. Spoon mixture evenly into pepper halves. Place stuffed pepper halves on prepared baking sheet.
  5. Bake until peppers are tender, approximately 20 minutes.
