Catfish Poppers with Spicy Dipping Sauce

INGREDIENTS
  • 1/2 tsp. salt
  • 1/2 tsp. Cajun seasoning
  • 2/3 cup all-purpose flour
  • 1 large egg
  • 1/4 cup milk
  • 1 3/4 lb. catfish fillets, cut into 1 1/2-inch pieces
  • 1 1/2 cups Panko (japanese breadcrumbs)
  • Vegetable oil
  • Spicy Dipping Sauce
DIRECTIONS
  1. Combine first 3 ingredients; whisk together egg and milk.
  2. Dredge catfish pieces in flour mixture, and dip in egg mixture.
  3. Dredge in breadcrumbs.
  4. Pour oil to a depth of 1/2 inch in a large skillet; heat to 375.
  5. Fry catfish pieces, in batches, 2-3 minutes on each side or until golden brown.
  6. Drain on paper towels or brown paper bag.
  7. Serve with Spicy Dipping Sauce
