INGREDIENTS:
- 2/3 cup sugar
- 2 Tbsp. cornstarch
- 1/8 tsp. salt
- 1/2 cup water
- 1 quart fresh or frozen blueberries
- 2 Tbsp. lemon juice
- Combine dry ingredients in a large saucepan.
- Add the water and stir to dissolve the cornstarch.
- Add berries and cook, stirring over moderate heat until sauce is clear and thickened.
- Do not crush berries.
- When sauce is cooked, add the lemon juice.

"This sauce can be used hot or cold. It is wonderful on French toast, pancakes, plain cake, or ice cream. It is a great way to use those blueberries that are going soft."
